Everyone in this house absolutely loves apples and Dulce de leche.
Especially Fifi. I wanted to make a somewhat healthy and tasty treat
that could be enjoyed at any time of the day. I adapted this recipe from things I found on Pinterest and also what I had on hand.
Iced Applesauce Oatmeal Cookies
1 cup applesauce
1/2 cup sugar
1/2 cup honey
1/4 cup oil
1 cup flour
2 1/2 cups oats
1 egg
1 tsp vanilla
1/2 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
Combine applesauce, oil, egg and vanilla. Add flour, oats, honey, all sugar except 2 tsps, baking soda, salt and cinnamon. Drop dough onto a wax paper lined baking sheet. I usually oil the baking sheet, place the wax paper and then oil the paper as well. Put the remaining sugar on a plate and wet the bottom of a glass. Dip the glass into the sugar and flatten each dough ball. Bake 10-12 minutes @ 375. Let cool.
Icing
1 package powdered sugar
1 tbsp dulce de leche (or caramel sauce)
2 tbsp water
Mix all together with a wisk while your cookies are cooling. To make for easier icing, I put in a ziplock, cut the tip and Voila!! I think my next batch I'll add golden raisins. Let me know what you think!
