Healthy treats

It's been a rough road trying to find things that both kids will eat that don't consist of a bunch of sugar and salt. I swear they have a radar for all things healthy. I think I'm getting over on them and then they spit it out and the dog eats it off of the floor. I guess I should be happy that somebody likes it. I found a recipe that I modified from Cook Republic for gourmet carrot cookies. Take a look at the modified recipe below:

Carrot Ginger Cookies

  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • 3 tsp ground flaxseed
  • 1 tsp freshly grated ginger
  • 1/2 tsp cinnimon
  • 1/2 cup oatmeal
  • 1 cup shredded carrot
  • 2/3 cup honey
  • 1/2 cup olive oil
Combine dry ingredients and ginger. Add carrot, honey and olive oil. Mix until it has a dough like consistency. Shape into tbsp balls and put onto greased cookie sheet. bake 10-12 minutes.

I can honestly say these are really good! They have a little bite from the ginger and they are a bit like biscuits. I like them, the real test comes when the kiddies try them.
